Spring Wheat Berry Salad

Spring Wheat Berry Salad

  • 1 ½ cups hard wheat berries
  • 1 spring onion, finely minced
  • 3 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • 2 cups spring vegetables like asparagus, peas, microgreens and/or radish
  • ½ cup dried dates
  • ½ cup walnuts
  • ½ cup tangy cheese like goat cheese or feta
  • Salt and pepper to taste

Preparation directions:

  1. In a large pot combine the wheat berries and 3 cups of water. Bring to a boil and cook uncovered for 1 hour, or until tender. Drain and let cool.
  2. While wheat berries are cooking, whisk together oil, vinegar, honey and minced onion and set aside.
  3. Once the wheat berries are done, combine berries with the rest of the ingredients in a large bowl. The spring vegetables can be added raw or lightly sauteed beforehand if desired. Salt and pepper to taste.
