Spring Wheat Berry Salad

Spring Wheat Berry Salad
- 1 ½ cups hard wheat berries
- 1 spring onion, finely minced
- 3 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- 1 tablespoon honey
- 2 cups spring vegetables like asparagus, peas, microgreens and/or radish
- ½ cup dried dates
- ½ cup walnuts
- ½ cup tangy cheese like goat cheese or feta
- Salt and pepper to taste
Preparation directions:
- In a large pot combine the wheat berries and 3 cups of water. Bring to a boil and cook uncovered for 1 hour, or until tender. Drain and let cool.
- While wheat berries are cooking, whisk together oil, vinegar, honey and minced onion and set aside.
- Once the wheat berries are done, combine berries with the rest of the ingredients in a large bowl. The spring vegetables can be added raw or lightly sauteed beforehand if desired. Salt and pepper to taste.
